Stuffed Jack-o-Lantern Peppers


   Chicken Parmesan stuffed peppers, but spooky.

Ingredients needed: 3 cups shredded mozzarella, ½ cup freshly grated parmesan, 3 garlic cloves, 1 ½ cups marinara sauce, 1 tablespoon freshly chopped parsley, pinch of red pepper flakes, salt, ground black pepper, 12 oz. fresh or frozen breaded chicken, 4 bell peppers, ½ cup low-sodium chicken broth.

Preheat your oven to 400* and in a large bowl, combine your mozzarella, parmesan, garlic, marinara, parsley and red pepper flakes and season with salt and pepper. Stir until mixed thoroughly then fold in chicken.

To prepare your bell peppers, cut out the top as you would a pumpkin and remove all stems and seeds. Then in the side of the pepper, carve a face in the pepper using a knife.

Spoon in the mixture to your pepper and put the top back on them. Pour the chicken broth into a baking dish to help the peppers steam, and cover with foil.

Baking will take about 55 minutes to an hour, or until the peppers are tender.
